Mum's 1kg Butter Cake

1 kg Butter/Margarine
1 kg Sugar (150g less for dad)
14 eggs (med/large)
1 kg Flour with 8 tsp Baking Powder or 1/2 kg Flour + 1/2 kg Self Raising Flour or 1 kg Self Raising Flour
1 cup Milk
2 tbsp Vanilla Esscence

1. Preheat oven to 350 F. Line the base of cake tin with baking paper and butter the sides generously.

2. In a large bowl, cream the butter and sugar.

3. Add eggs, one at a time and continuously beating, until it is well incorporated and sugar dissolves.

4. Sieve the flour.

5. Fold in flour with a metal spoon or a plastic spatula spoon by spoon alternating little by little with the milk and vanilla. Make sure to fold gently rather than beating or mixing or stirring. Incorporate well, no floury bits.
