Best Chocolate Chip Cookies from Sophie, Kelly's Ex Flatmate

170g butter
1 cup brown sugar
1 cup white sugar
2 eggs
3 cups self raising flour
1 teaspoon vanilla essence
1 teaspoon baking soda
1/2 cup white chocolate melts
1/2 cup dark chocolate melts

1.Preheat oven to 170c or 338f.
2.Cream butter and sugar.
3. Mix in the remaining ingredients - eggs, flour, essence, baking soda, chocolate melts.
4. On a lined baking tray, spoon about a tablespoon (plus a little more) into a ball and press down. Leave atleast a 1cm between as they spread a little.
5. Bake for 10min, until to is slightly brown and cooked in top but still soft to the touch. If you leave too long, the whole cookie will become very hard. This cookie should be just cooked on the outside and nice and soft on the inside.
6. Place on a rack (they will be soft and feel uncooked but hard up on the outside to leave a nice soft inside)

Note: I found this on another baking site and thought it was a cool idea. If you forgot to let your butter soften... grate it :D
